Cacao powder is crafted through a specialized process that begins with cacao nibs—the pure, roasted pieces of the cacao bean. While grinding nibs creates a thick chocolate liquor, this mixture is further refined by separating the natural cocoa butter from the solids, resulting in the smooth, fine powder we know as cacao.
The amount of cocoa butter left in the powder determines its richness. Higher-fat cacao powders (around 20–24%) offer a deeper, more indulgent chocolate flavor and create moist, flavorful baked goods. Lower-fat varieties are lighter and more easily blended into cold beverages.
